Some good eats

I am still going strong. Totally eating healthy and wonderful. I am feeling great, although no weight loss, blah!! When I get time to try some recipes (and if they are good) I am going to start sharing them here on my blog. In the mean time, I did take some picture of a couple of tasty things I threw together today.

Doesn’t this fruit salad look so deliciously tempting?  I bet right now your thinking *hmm, do I have some fruit somewhere?*

For dinner I cooked up some boiled cabbage.  Just top with a smidgen of butter and some pepper and you’re good to go.

Last night I had a great dinner and I totally meant to take a picture. Needless to say I was two bites in before I realized I had forgotten to do it.  Oh well, I am sure I’ll remember next time.  On to my dinner.  I had a veggie burger on a 100% whole wheat sandwich thin (like a flat hamburger bun) topped with lettuce, tomato, onion with vegan 1000 island dressing.  It was so good. I had had veggie burgers before but they were usually dry tasting, this must of been a different brand because it wasn’t dry at all.   In fact it was good enough that my teenager had one too.

Man, I really need to stop looking at the fruit photo, I am getting hungry.

Funny how the mind changes

It feels like my mind has changed and in a good way.  Usually when I start a “diet” or better eating habit, it never ready works out.  I always get cravings, get frustrated cause I am not losing weight, or feel deprived.  I haven’t (so far anyway) felt like that since I have given up meat, eggs, cheese and processed food.

Also I lost like 2 lbs but then gained 1 back (whats up with that?).  Anyway any other time I would get all down on my self (yes, that happens over 1 freaking pound) and totally munch all the next day punishing myself.  But not today.  I know I am eating totally healthy and if I gain or lose, it is because that is what my body needs to do and not cause I deprived myself or overindulged.  Wow, you know, it is so liberating!!

Other then my overall health two things changed the whole way I look at food.  One is the book Skinny Bitch.  This book is both funny and enlightening.  Every bitch needs to read this book.  The other thing is the movie Earthlings.  It will profoundly change the way you eat (it did me).  I just can’t imagine anyone watching it and not be changed by it.

My oldest son questioned me about my new eating habits and I felt he was old enough to know what I know.  I can see him doing what he can when he can, as he is already talking about limiting the meat he eats.  I don’t expect him or anyone in my family to jump on this wagon with me.  Although once I get back to the RV and we all get settled in a routine again I will be cooking much healthier dinners.  As opposed to the processed dinners from a box I normally cooked (egads).  So I believe it is a win, win situation.  My dh is totally supporting me too which is great.  And if he wants a steak (which he loves) then more power to him just don’t bring it around me.

I am feeling great, mind and body and my only intention regarding you my readers, is just sharing my journey with you.

Trying something new

Ah, Fruits and Veggies

Yep, trying something new (hopefully for a long time).  I really don’t know what prompted this and I guess it really doesn’t much matter.  The fact is I wanted to get healthy and wanted to make a difference (in my own small way).  So I have become a  vegetarian and I am working my way towards vegan. 

Like I said I am not sure what put the bug in my head.  I don’t even know why I started looking into the treatment of  farm animals.  I mean, deep down I knew somewhat of what was happening but just turned a blind eye to it.  I have always said that if I had to raise and kill my own meat that I would never eat it again.  The more I saw, and the more I read, the more it just starting eating at me.  Not to mention the health benefits from not eating meat, dairy etc…

It has only been a few days so far.  So far so good though! I have given up all meats, processed foods, and anything I find or know that contains animal products except milk and some butter.  I am still having milk cause I drink it in my coffee and so far I have been unable to do without it.  Although I am substituting some of my coffee for hot green tea.  Also I haven’t had a soda in like 3 days.  Yes I know that isn’t long, but for me to not have any soda at all for that long is BIG for me.  And so far I have found that I don’t miss it.

Tonight I am going to try out my first Tofu recipe.  A very easy Fried Tofu that I will top my salad with.  I have had tofu before and anytime I did, it was good.  Just hope I can cook it as well.

Hopefully I will get things more and more figured out and update you as I do.

SouthLAnd – 2nd Season on TNT

Have you ever seen the show Southland?  If so, you know how good it is.  If not, well here is a little history for ya.

The following information was taken from the official press release at Turner.com

SOUTHLAND premiered on NBC in April to rave reviews.  The series was called “tough-minded [and] suspenseful” by The New York Times, which also said, “SOUTHLAND is commendably stinting and cold, a series that doesn’t aim to please, and is all the more pleasurable for it.”  The Hollywood Reporter called SOUTHLAND “exciting, smart, realistic and brilliant,” while Daily Variety said, “[John] Wells and company have delivered a cop drama with its own racing pulse.  The crisp execution … has a decidedly elite cable feel.

In SOUTHLAND, John Cooper (Michael CudlitzA River Runs Through It) is a veteran cop assigned to train young rookie Ben Sherman (Ben McKenzieThe O.C.).  Cooper attacks his job with a no-nonsense firmness that sometimes leaves Sherman wondering if he’s really cut out to be a cop.

The series also follows Detective Lydia Adams (Regina KingRay, Jerry Maguire), who spends her off-work hours serving as her mother’s primary caregiver.  Her partner, Detective Russell Clarke (Tom Everett ScottBoiler Room), is a father struggling with an unhappy marriage.  Detective Daniel “Sal” Salinger (Michael McGradyThe Thin Red Line) oversees a unit of gang detectives, including Nate Moretta (Kevin AlejandroDrive, Ugly Betty) and Sammy Bryant (Shawn HatosyAlpha Dog).  And patrol officer Chickie Brown (Arija BareikisCrossing Jordan) is a single mom determined to make her mark as the first woman in the SWAT unit.

TNT was able to acquire 13 episodes of SouthLAnd.  Seven episodes from the first season which started airing on TNT in January, and  6 episode for season 2 which starts March 2nd.  I’ve managed to catch the last few episodes from season 1 and I got a sneak peak into season 2.  From what I saw of the sneak peek, season 2 looks really good with all of the drama SouthLAnd (and TNT) can deliver.  SouthLAnd is filmed like your in the action, right there with the cops, criminals and victims.  It is raw and intense and I personally loves shows like that (I am a “Drama Queen” as in I perfer dramas over other types of shows).  If you are a SouthLAnd fan then you know what I mean.  If you have never seen SouthLAnd then you really need to check it out and see what all the hype is about.  You still have time to catch up.  You can watch full episodes online from Season 1 at TNT .  You can also click above for a preview of season 2.

What if your life was just a dream?

I should really have some electrodes attached to my brain when I settle in for sleep at night. That seems to be when my brain is going full blast. That is when I come up with a dozen of things to blog about.  However by the time I wake up it has all turned to mush and my blog pages stay blank.  But I digress since my lack of daily posts isn’t what this is about.

What if your life was just a dream?  Meaning, what if “my” life is just a dream?  Some nights when I lay quietly in my bed I have random thoughts and I wonder what would happen if I awoke the next morning, opened my eyes and found myself somewhere else. Somewhere else in my past, maybe 10 or 20 years past (ah yeah, I am that old  lol). What if I opened my eyes and I found myself in my past with who ever I was with at the time and where ever I was living at at the time.  What if everything that happened from that point in my past till now had all been just a dream?  When we sleep at night we have dreams all the time that seem real and feel real.

Would I wake up and just go “wow, what a crazy dream” and just go about my life?  Would I freak out wondering what happened to my husband, my kids, my life?  Would I morn for what I thought I had lost?  How would I explain it to people?  I am sure they would just roll their eyes and look into having me committed.  Would I change how I live my life from that point on?

Sometimes in this life I wish I had done more. Taken more opportunities.  No matter what I have wished I’d done at any given time in my life, I do know that had I done only one thing differently it could of completely sidelined the life I live now.  I happen to like my life, love my family and pray every night that when I wake up I will still be right here where I belong.
